A lot of people had never heard of “Kiping”. These are leaf-shaped wafers made from: RICE!
Every year, the Pahiyas Festival is celebrated in Lucban, Quezon, a province here in my country, the Philippines. The festival won’t be complete without these colorful array of “Kiping”!
I saw this lantern hanging in Buddy’s, one of the restaurants here in Metro Manila and it reminded me of a time we went to see the festival so many years ago. Usually the “kipings” are made into lanterns that they hung in the houses to welcome the feast of San Isidro Labrador, the patron saint of the harvest.
It is very time consuming to make this and it makes use of fresh coffee leaves, cacao, banana leaves, among others.
